ABOUT ME
Hi! I’m Kat, a stay-at-home mother of 2 and Air Force wife. I love to cook and bake but my recipes don’t adhere to any book or program (whole 30, vegan, gluten-free, etc.), I just make meals that are as healthy as I can possibly make them without sacrificing taste.
I decided to become a vegetarian when I was 12. Living in a house of non-vegetarians, I had 2 choices: learn to cook or live on cereal. I learned to cook. Luckily my husband is willing to eat all of the veggie dinners but he and my children are meat-eaters. So occasionally I will make something with chicken in it for them but mostly we are a vegetarian household. A few years ago my husband and I read the book Clean and started to avoid dairy and processed oils, sweeteners and grains too. We noticed a huge improvement in how we felt so we try to stick to that as often as we can. Except for cheese. I love cheese and the substitutes out there are gross in my opinion.
My mom always encouraged me to bake, even though I left a mess every time. By the time I was in high school I had perfected my own cornbread and buttercream icing recipe (which I would eat with a spoon) as well as a few others. Most of my baking was fueled by my constant cravings for sugar, and still is. Now, I just try to find ways to satisfy my cravings with healthier options…and then occasionally binge on my kids’ Halloween candy.
