Green Eggs (made with with spinach)
This is one of my all-time favorite recipes and it’s barely even a recipe! Its a great way to get your kids to eat spinach and they don’t even have to know it’s in there.
If you know me, then you know I like to put spinach in pretty much everything: smoothies, eggs, tacos, even pancakes. Yes, I just said pancakes (Egg and Banana Pancakes). There is something about getting my kids to eat leafy greens for breakfast that makes me feel like a rock star mom, even though I am far from it! Now, this is the only way my kids eat their eggs. You don’t need a fancy powerful blender or anything. For the past 10 years I’ve been using a $25 blender from Target and it worked just fine until my husband decided to spoil me last Mother’s Day with a Blendtec.
The first step is to get the book Green Eggs And Ham by Dr. Suess. Read it to your kids. Talk about how fun it would be to have green eggs and ask them if they would like to try some, or better yet, help you make some. You are on your way to getting your kids to eat spinach.
To start, put one handful of spinach in a blender or Bullet. Start with 1 handful per 4 eggs, less if you have picky kids. The flavor of the spinach is very subtle and my kids can’t taste it, but some might. You can gradually increase the amount of spinach as they/you get used to the flavor. Add just 1 egg to the blender at first and blend on medium. The spinach blends better with just one egg. It will turn into a disgusting looking green goo. Then add the remaining eggs and quickly pulse for a few seconds on low. Just enough to make it scrambled but not frothy.
Pour the green eggs into a hot pan on medium and cook as you would any other scrambled eggs.
Salt to taste and serve with salsa or, my kids favorite, ketchup. If you really want to go above and beyond, serve with Canadian bacon or ham.
You can personalize this recipe with any of your favorite add-ins: mushrooms, onions, peppers, cheese, etc.

- Put 1 egg and spinach in blender. Blend on medium until the spinach is completely blended. Add the rest of the eggs and pulse on low 2-3 times until the eggs are scrambled but not frothy.
- Cook in a medium pan over medium heat until cooked thoroughly but not dry. Salt to taste. Serve with salsa or ketchup (optional).
