Oat and Apricot Granola Bars
These granola bars are so yummy and easy to make that you’ll wonder why you’ve been buying the premade ones. They are the perfect blend of oats and quinoa flakes, dried fruit, and seeds with just enough sweetness to make them deliciously cravable.

Ingredients
- 3 cups quick oats or quinoa flakes (or a combination of the two)
- 1/2 cups ground flaxseed (Golden flaxseed works best)
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/2 cup chopped apricots
- 1/2 cup raisins or dried cranberries (or a combination of the two)
- 1/4 teaspoons sea salt
- 1/2 teaspoons cinnamon
- 1/2 cup avocado or olive oil
- 1/3 cup pure maple syrup or honey
- 2 Tablespoons molasses or coconut nectar

Instructions
- Line a cookie sheet with parchment paper. Combine the oats/quinoa flakes, ground flaxseed, and pumpkin and sunflower seeds, spread on the cookie sheet and place in the oven while it preheats to 325 degrees. Remove once the oats look very lightly golden (5-10 minutes)
- Meanwhile, in a large bowl combine the remaining ingredients. Add the oats/quinoa mixture from the oven to the bowl and stir until well combined.
- Firmly press the mixture into the parchment lined cookie sheet. Bake for 10 minutes. Remove from oven and press the bars firmly all over again using the bottom of a metal measuring cup or a glass. Return to the oven and bake another 10-15 minutes until they are golden brown.
- Allow to cool completely. Use the parchment paper to lift the bars out of the pan and transfer to large cutting board. Cut with a sharp knife into 20 bars. Store in an airtight container.
